Hot Honey Tofu Halloumi Tacos with Edamame Guacamole

Whisk together the tofu halloumi marinade ingredients in a shallow dish. Add the tofu slices and turn to coat. Leave to marinate while you prepare the rest — overnight in the fridge is ideal, but even a short marinade while you prep will add good flavour.

🌾 For a GF option, swap the mini wraps for your favourite certified gluten-free wraps and ensure your gochujang sauce is gluten-free.

🫙 Store the tofu halloumi and guacamole separately in the fridge for up to 2 days. Add the pomegranate, rocket, and lime fresh when serving.

❄️ The marinated tofu (before cooking) can be frozen for up to 3 months. Defrost overnight in the fridge and cook from fresh.

💡 For best results, marinate the tofu overnight — the longer it sits, the deeper the flavour.

💡 The edamame guacamole also works brilliantly as a dip or spread — make a double batch and keep it in the fridge for up to 2 days.
