Maybe try what Giulia did by adding some tofu bacon? See her comment below - that will add a good punch of flavour and texture ♥️

This was SO GOOD - and I even forgot the stock 😅 & we used tofu bites (we used a recipe we tried last week) as croutons! Will for sure do this again the proper way 💪🏼

Great idea! The tofu bites are super versatile! I use them all the time to give a bit of punch to loads of recipes! Worth having a stash in the fridge as a sprinkle option!
