Heat a good glug of olive oil on a non stick pan over low heat. Once the oil is warm add the minced garlic and the chilli flakes. Stir and let the garlic cook for 2 minutes (make sure it doesn’t turn brown).

Wonderful flavors in this recipe! But I’m a bit confused. I made the recipe for 2 servings and they were fairly small servings. But your nutrition facts say there are 25g of protein in 1 serving, however that seems to be the amount for 2 servings the way the recipe is written.

Wanted a quick breakfast dish and this certainly didn’t disappoint! I made a couple of tiny tweaks: I didn’t add the lemon juice as it was lemony enough for me with just the zest, and I discarded the beans water from the can and used around 80ml of veg stock for the liquid. I also squished half of the beans to make the sauce creamier. What delicious flavours!

I use canned beans but if you want you could cook the beans yourself! The creaminess comes from the bean stock (the recipe suggests adding the beans and the stock from the tin). If you cooked the beans yourself, you may need to add something to give that creaminess like vegetable stock. Hope that helps! xx

Delicious! I sauteed some onions and finely sliced old zucchini that needed to be used up before adding the garlic, chilli, and parsley. Served with some roti that we had in the freezer. Absolutely perfect for a quick weeknight dinner.
