Sweet Potato Spicy Tu-Nah

This is my take on Joe & The Juice's viral Tunacado sandwich, but we leave the fish well alone and swap the bread for a baked sweet potato instead. The punchy Spicy Tu-Nah stands in for the tuna, piled onto soft roasted sweet potato with basil pesto and a scoop of creamy avocado guac. Finished with fresh basil, it's the perfect plant based dinner.
