This is really good, I love the combination of the sweet apricots and the refreshing lemon dressing! I used white asparagus and lightly roasted it in a pan.

By the way, I believe the nutrition information is off for this recipe. When I calculated it myself, I’ve got ~700 kcal per serving (salad and dressing).
