Cowboy Caviar Salad

This is Gigi's twist on the classic cowboy caviar. The only cooking involved is charring the sweetcorn, which takes the whole thing from good to incredible. Smoky black beans, punchy jalapeño and a bright cumin-lemon dressing come together in 15 minutes, making this one of those recipes you'll want on permanent rotation.

Turn cooking mode on

Step 1

Heat a drizzle of extra virgin olive oil in a non-stick pan over medium heat. Add the sweetcorn in a single layer and cook undisturbed for 4-5 minutes until it starts to char on one side. Toss with a spatula and cook for a further 3-4 minutes until evenly charred. Set aside.
