Usually I’m not a fan of butter beans but with this recipe they are amazing! We substitute the dried tomatoes with the tomato paste and reduced the chili flakes (according to our taste). Super and quick!

I don't find butter beans anywhere. the lima beans I bought are XL. after soaking i removed the (very thick) skin and no matter how long I sautéed them, they don't seem to soften. I thought the beans were old at first but the package says best before 2028. Flavours turned out great but I didn't expect the beans to be almost crunchy. You will know what I mean when I say it was like lupini. And it's my first time cooking these beans so maybe that is how they are. Would have enjoyed it a little more if the beans weren't

Hi Adriana! Totally understand what you mean if the texture was similar to lupini. From what I understand you’re Italian or speak Italian. I would look for ‘fagioli bianchi di Spagna’. I think those are the correct ones. If you can’t find them cannellini will work beautifully 😊
