The Easiest Lentil Salad

Some salads wilt in the fridge overnight. This one gets better. Hearty lentils and juicy cherry tomatoes soak up a miso-maple dressing that's part tangy, part sweet, while crunchy cucumber, peppery rocket, briny olives and smoky sundried tomatoes keep every bite interesting. Make it ahead, forget about it, and thank yourself later.

Turn cooking mode on

Step 1

In a jar with a lid, combine the extra virgin olive oil, apple cider vinegar, maple syrup, white miso paste, lemon juice, nutritional yeast, and a pinch of salt and pepper. add about 3 tablespoons of water. Seal and shake vigorously for about 30 seconds, until the miso has fully dissolved and the dressing looks smooth and glossy. Add a splash more water to thin, if needed.
