Green Orzo with Rocket Pesto and Whipped Yogurt

Sometimes you just want lunch to taste like a sunny afternoon. This green orzo is exactly that: tender little grains tangled up in a vivid herb sauce, sweet peas and edamame tucked through, finished with cool soya yoghurt and a few sharp pickled onions for contrast. Step 1

Heat a glug of extra virgin olive oil in a pan over a low heat. Once hot, add the diced onion and lemon zest and cook for about 5 minutes until the onion is soft and translucent.

🌾 Swap for a GF orzo (Rummo does a GF version), or substitute the orzo with short-grain brown rice or pearl quinoa Double-check your white miso is rice-based (most are) and not barley-based.

🫙 Store leftovers in an airtight container in the fridge for up to 2 days. Loosen with a splash of water or stock when reheating, as the orzo will drink up the sauce.

❄️ Not recommended to freeze the finished dish (orzo turns mushy on thawing). The herb sauce alone freezes well — pour into an ice-cube tray, freeze, then defrost a few cubes when you want to make it again.
