Chickpea Puttanesca with Crispy Tofu Bacon

This is the ultimate high-protein, plant-based comfort meal. Briny capers, salty olives, sweet sun-dried tomatoes and rich chopped tomatoes come together to create a bold, punchy puttanesca base, boosted with chickpeas for extra fibre and protein. Topped with smoky-sweet tofu bacon and fresh kale, it’s nourishing, satisfying, and perfect with crusty seeded sourdough to soak up every drop.

Quick and easy to prep. Simple ingredients that made this a tasty lunch full of flavor. Didn’t think I would like the kale but massaging it with olive oil and a bit of salt made all the difference.

Super tasty. Added a bit of broccoli, just because it was lying around, other than that followed the recipe closely and served with homemade sourdough bread. Yummy!
