and I had spinach to use up so I used that instead of kale, and I am not a fan of parsley so used fresh basil, yummmmmmm. Sorry so menay comments, I forgot to say everything the first time lol.

I LOVE THIS! So delicious. I made 4 portions, ate one and put the rest into my brand new meal preppy containers! I felt like such and adult! The tofu bacon is delicious, I'll be using that in everything I eat from now on 🤣

Really really nice!! Loved the taste and as I had a sad Aubergine looking at me in the fridge I added it to it and it fits the recipe perfectly!!! Love this dish!

Quick and easy to prep. Simple ingredients that made this a tasty lunch full of flavor. Didn’t think I would like the kale but massaging it with olive oil and a bit of salt made all the difference.

Super tasty. Added a bit of broccoli, just because it was lying around, other than that followed the recipe closely and served with homemade sourdough bread. Yummy!
