Iron-Rich Tahini Pesto

This is the pesto equivalent of a Swiss Army knife: sharp and garlicky, built to do a bit of everything. Blitz it once and you've fast-forwarded through a week of dinners - stir it through pasta, spread it on toast, dollop it onto roasted veg. Tahini and pumpkin seeds bring a proper iron boost, so it's doing the nutritional heavy lifting while your future self does none of the cooking.

Turn cooking mode on

Step 1

Add the basil, lemon juice, pumpkin seeds, tahini, garlic, nutritional yeast, hemp seeds and olive oil to a food processor and pulse until roughly combined. Season with salt and pepper. With the processor running, add the cold water a little at a time, checking the consistency as you go - you may not need the full 50ml. Keep pulsing until it's a coarse, spoonable pesto, or longer if you prefer it smoother and less grainy.
