Italian Summer Pasta Salad

Some recipes carry a whole feeling with them, and this is one of mine. This is the pasta Nonno Giorgio (my dad) would cook me when I came home visiting in the height of summer, made with cherry tomatoes and basil straight from my parents' garden. There's real magic in homegrown food, and a dish this simple lets every ingredient shine — so if you can, reach for the freshest, most flavourful produce you can find. Even better the next day, as the cherry tomatoes will have had time to marinate and the tofu will have absorbed all the juices.

Turn cooking mode on

Step 1

Place cherry tomatoes, olives, capers, garlic, tofu and basil in a large serving bowl. Season with a pinch of salt and pepper and a good drizzle of olive oil. Set aside to marinate for at least 15 minutes.
