New family favorite. Great and different (for us) flavours. I pan fry the fake bacon as we don’t have space in the oven for the zucchini and the bacon. The fake bacon is absolutely delicious, everything that is good about bacon - salty/sweet and none of the bad bits!

Delicious! I used smoked tempeh, as I didn’t have regular tofu and it turned out really well. Peaches not as nicely charred as Gigi’s, as I don’t have the right pan.

Awesome, Gwendolyn! Smoked tempeh sounds like a great twist, and I'm glad it worked well for you. 😊 Don't worry about the peaches, most important is that they're tasty!
