Mezze Maniche with Broccoli & Happy Pancetta

This is one of those deceptively simple pasta dishes that gives maximum flavour with minimum effort. The broccoli melts into a creamy, garlicky sauce, the lemon peel brightens everything, and the maple-soy tempeh pancetta adds the perfect salty-sweet crunch on top.

Step 1

Make the Happy Pancetta. Mix the maple syrup, tomato paste, and soy sauce in a small bowl. Heat a drizzle of sesame oil in a non-stick pan (use the same one you’ll later use for the broccoli). Add the cubed tempeh and cook until golden on all sides. Reduce heat, pour over the glaze, and toss to coat. Cook for 1–2 more minutes. Transfer to a plate and set aside.

Delish and quick to make. I didn't have mezze maniche, so used cavatappi instead which worked as well! My mum used to make something similar but used fried onion to give it a bit more flavour (minus the happy/sad bacon) - i really liked this version (kid approved as well!)
