Smoky Beanballs Flatbread with Tahini Pesto

This is what happens when your freezer-stashed meatballs finally get their moment to shine. Warm Greek flatbreads turn into the perfect handheld base for a garlicky tahini pesto, peppery rocket and those smoky tempeh and black bean meatballs you made earlier in the week, all topped with juicy quartered cherry tomatoes. Ten minutes from fridge to plate, proof that prep now really does mean dinner later.

Step 1

Preheat the oven to 180°C fan / 200°C / Gas Mark 6 / 400°F if reheating in the oven. Place the meatballs on a lined tray and warm through for 8-10 minutes, until piping hot in the centre. Alternatively, reheat them in a hot pan with a little oil, turning every couple of minutes, for about 5-6 minutes.

I used a protein flatbread which I had in the cupboard, so it looks a little different from the picture, but scrumptious as always!☺️

I actually love when they look a little different! It means everyone’s making it their own. So glad you enjoyed it ❤️ xx
