Smashed Cucumber & Tempeh Cold Noodle Salad with Tahini Chilli Dressing

A 20-minute assembly job that's ideal for lunch or a light dinner. The smashed cucumber technique draws out excess water so it stays crisp, and the tahini chilli sauce comes together in seconds. This is one of those salads that somehow manages to be both deeply satisfying and completely refreshing — the crispy golden tempeh, silky noodles, and that punchy tahini-chilli dressing are an absolute dream together.

Turn cooking mode on

Step 1

Place the cucumber on a wooden chopping board. Smash it along its length using a heavy pestle or rolling pin until it splits open. Slice diagonally into 3–4cm (roughly 1–1.5 inches) pieces and transfer to a medium bowl. Sprinkle with a pinch of salt and set aside for 15 minutes, then drain off any excess liquid.

Added thinly sliced cabbage for more green and sambal oelek to finish. Also didn’t have like so subbed apple cider vinegar. It was good! Reminiscent of Vietnamese fresh rolls
