Notes

To make your own pumpkin purée, roast chunks of Delica or Kabocha squash until soft, then blend until smooth. If using canned purée, the flavour may vary slightly. 🌾 For a GF option use certified GF orzo. 🫙 Store in the fridge for up to 4 days. ❄️ Freeze for up to 3 months.

It took me a trip to Italy to find orzo ;) and it was worth it, it’s really delicious. I also swapped tempeh for smoked tofu, and added a bit of turmeric to brighten the colour. It’s like a risotto on a different level!

Love that twist. Smoked tofu works really well, and turmeric is such a nice touch. So glad it was a success! ❤️Fun fact: in Italy we call this pasta risoni ! orzo for us actually means barley. Different names, same great result. 😊

Delicious! When I make this again I think I will add a bit more sage, and perhaps cook the tempeh in advance, or at the same time in a second pan. (Just to make it closer to a 30 min recipe for me)

Hey Debra - Yep, sometimes I use a second pan when my tummy demands dinner a little quicker. I find it does taste better if you use the same pan though, so can be worth the extra time!
