No Cook Spicy Peanut Tofu

This is what happens when a Thai takeaway and your Sunday meal prep fall in love. Extra firm tofu gets a proper soak in a soy-miso-maple marinade with just enough chilli to keep things interesting, then gets showered in toasted sesame, spring onion and crushed peanuts for crunch. 🌾 For a GF option, use a certified gluten-free soy sauce (tamari) in place of regular soy sauce.
🫙 Storage: Keep in an airtight container in the fridge for up to 4 days.
❄️ Freezer: Best fresh — once mixed with the marinade, the tofu's texture changes on thawing, so freezing isn't recommended.
💡 The longer it marinates, the more the flavour develops — a few hours works in a pinch, but overnight is best. Great over rice or noodles, or eaten cold straight from the fridge.
