Mediterranean spiced meatball and couscous soup

This is the dinner equivalent of a blanket. Brothy, pesto-flecked couscous with smoky tempeh and black bean meatballs warming through on top, and barely any actual cooking involved. The kind of bowl you eat curled up on the sofa, spoon in hand, nothing to prove.

Step 1

Bring the vegetable stock to the boil in a saucepan. Add the giant couscous, reduce to a simmer, and cook for 10-12 minutes, stirring occasionally, until the couscous is tender with a slight bite and the mixture has a brothy, soupy consistency.

Notes

🌱 Plant Points: 10
🌾 Giant couscous is wheat-based, so for a GF option swap it for a certified gluten-free grain like quinoa or rice, and check your stock and pesto are labelled gluten-free.
🫙 Storage: Best eaten fresh, but leftovers will keep in an airtight container in the fridge for up to 2 days.
❄️ Freezer: Don't freeze once assembled - the couscous won't hold up. The meatballs alone freeze well (see their own recipe).
