Loved the taste but couldn't get the texture quite right - too hard/not creamy enough when frozen, too liquid when slightly melted. I will try again whith help of my ice cream machine and am sure it will turn out delicious :)

So glad you loved the taste Martina! Quick question, did you add the coconut oil as per the instructions? That really helps with the texture, though it will still be a little different from regular ice cream as the fat ratio isn’t quite the same 🙂 You could also try using just the thick part of canned coconut milk for a creamier consistency, just keep in mind it might slightly overpower the pistachio flavour. But if you’re using the ice cream machine next time it’s going to be amazing!!
