Spicy Tu-Nah Melt

Grilled cheese and a deli counter had a very plant-based night out, and this is what showed up the next morning. Our spicy chickpea 'tuna' gets tucked between two slices of seeded bread and a creamy, tangy soya mozzarella that turns rich and molten under heat. Air fry it or pan fry it - either way, you'll end up with a golden, melty sandwich. No actual fish were consulted.

Step 1

Put all the mozzarella ingredients in a blender and blend until smooth. Transfer to a small saucepan over low heat and whisk until it starts to thicken, about 5 minutes. Take off the heat and keep whisking for a minute to smooth out any lumps.
