🌾 For a GF option use certified gluten-free potato gnocchi.
🫙 Storage: keep the sauce and roasted vegetables in separate airtight containers in the fridge for up to 3 days. Re-crisp the gnocchi in a hot oven or dry pan before serving.
❄️ Freezer: the sauce freezes well for up to 2 months. The roasted vegetables can also be frozen - the gnocchi is best made fresh.

perfect summer dish! You can really taste all the herbs in the sauce :) I had so use some other type of potato noodles but I think they taste pretty much the same. And I added a planted skewer to get some more protein. (the dish is also tasty cold)

I dont have access to smoked tofu. Should I add some smoked paprika to the sauce?

Start with a small pinch, maybe a quarter of a teaspoon, and taste as you go, smoked paprika can turn bitter if you add too much 😊 If you want to round out the smokiness even more, a tiny drop of liquid smoke or a splash of smoked soy sauce works really nicely alongside it too.

This was so delicious! It's way too hot here in San Diego to turn on the oven so my husband grilled the veggies. I did add a little spinach to the sauce. We are definitely making this again.

So yummy! I loved the bold yet fresh flavours🤗. As I'm not the biggest fan of smoked tofu, I used plain tofu instead and it was perfect for me💖. I love how creative you are with plants, Gigi!

Thank you so much, that means the world!! 🥹 I do have a thing for smoked tofu so you'll see it pop up quite a bit, but the good news is that most recipes work just as beautifully with regular tofu so never feel like you have to use it 💖

Wow! I figured this would be good, but it was Sooo Good! I thought the sauce smelled a little too smoky for my taste, but the flavour was amazing. I added a small eggplant too, because I had one. Terrific recipe Gigi!
