🌾 For a GF option, swap the soy sauce for tamari or a certified gluten-free soy sauce (the rice paper and noodles are already gluten free).
🫙 Storage: Best eaten fresh - rice paper turns chewy once chilled. If needed, wrap tightly in cling film and keep in the fridge for a few hours. Store the dressing separately in an airtight container in the fridge for up to 5 days.
❄️ Freezer: Not suitable once assembled. The cooked tofu freezes well on its own for up to 3 months.
💡 For a genuinely no-cook version, use pre-marinated tofu from the supermarket (any Asian-inspired flavour works). Swap in Thai basil or mint if you have it, and use this to clear out any bits of veg in the fridge.

We did it using vegan egg roll wraps and air fried them, slightly less healthy but so worth the deliciousness 😋 pairs well with some salted edamame for extra protein 💪🏼
