Charred Green Bean & Smashed Cucumber Salad with Herby Tahini Yoghurt

Forget boring salads - this one gets smashed, charred and dunked in herby tahini yoghurt for good measure. Sweet-sharp red onion, blistered green beans, cool cucumber and edamame pile up over a creamy dressing, finished with a scatter of toasted seeds and pistachios for crunch. It's the kind of bowl that tastes like way more effort went in than actually did. Fresh, punchy, and gone before you know it - ready in well under 40 minutes.

🌾 For a GF option, serve with a certified GF bread.
🫙 Storage: keep the salad, dressing and toppings in separate airtight containers in the fridge for up to 2 days. Combine just before serving so the seeds stay crunchy and the cucumber stays crisp. The yoghurt dressing may firm up in the fridge - loosen with a splash of water and stir until smooth again before serving.
❄️ Freezer: not suitable for freezing.
